     PAUPETTES DE VEAU AUX CONCOMBRES

                 
    [Veal Birds with Cucumbers]
 
Brief Description:  Breaded 'bird-like' shaped veal stuffed with a delicious mixture of ground veal, Crème Fraîche, bread crumbs and diced cucumbers.

      Ingredients for 4:                       Preparation:
   
  1. 3/4 lb ground boneless veal
  2. 1/2 cup fresh white bread crumbs
  3. 1 1/2 cups Crème Fraîche
  4. 1 egg yolk
  5. Salt
  6. Paprika
  7. 8 slices of veal (1/4 in thick), cut from the upper leg
  8. Freshly ground white pepper
  9. 3 tbs peanut oil
  10. 3 tbs butter
  11. 2 cucumbers, peeled, cubed and blanched in salted water for 10 minutes
  12. 3 tbs minced chervil or parsley.



     

 

  1. Make a stuffing by combining the ground veal, the bread crumbs, 1/2 cup of the Crème Fraîche and the egg yolk.  Season the mixture with salt and paprika.  Flatten the veal slices between sheets of wax paper with a mallet or the flat side of a cleaver and season the slices with salt and pepper.  Put a little stuffing on each of the veal slices, roll them up and tie them securely with string.
  2. Heat the oil and the butter in a casserole and sauté the veal birds quickly over high heat until they are golden on all sides.  Add the cucumbers, reduce the heat, cover and simmer slowly for about 20 minutes.
  3. If the veal birds and the cucumbers have yielded a large amount of pan juices, drain these off into another saucepan and reduce them.  Then pour them back on the meat.  At serving time, add the remaining Crème Fraîche and a goodly amount of minced chervil or parsley.
